Honey Curried Chicken

Now that we have moved a whole five blocks away from the grocery store, I think I might actually starve. I haven’t bought groceries since Thanksgiving weekend. Luckily, that weekend, we bought a lot of groceries that have carried us this far but now all of our fresh food has long since spoiled and been tossed. We now have to forage through the freezer and condiment section of the refrigerator for something that resembles a meal.

I know that I could have gotten off my butt and walked to the grocery store tonight, even better, I could have driven, but it was cold, dark and windy. Still, I had to feed myself. We had chicken and rice, that was a good start, but I needed to decided what to do with the chicken. Plain chicken is just too boring.

Then it occurred to me that earlier today, my mother-in-law sent me a chicken recipe that she had made for us last week. I would like to share it with you, because it delicious and involves fairly basic ingredients that I assume most people would usually have on hand.

3 lbs boneless skinless chicken breasts
1/3 c. melted butter
1/3 c. honey
1/4 c. dijon mustard
2 tsp. curry
dash of cayenne (opt.)

Combine butter, honey, mustard, curry powder and cayenne. Pour over chicken. Bake for 20 minutes at 375 degrees F. Turn chicken over, baste and bake another 20 minutes. Serve with rice.
